Valentine's Day Class Recipes

Okay okay okay, I know, this stuff isn't all that healthy, but you don't eat it every day.  So a little bad every once in a while isn't going to kill you.  And if it is really really good, then wow!

 Healthy Pancakes

To two cups freshly ground whole wheat flour add a half cup rolled oats, 1/4 cup organic evaporated cane juice (or sugar if you must) 1 and 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1/2 cup non-canola oil, 2 eggs and some milk to make a thin batter.  Add some cinnamon, allspice and nutmeg and cook heart shaped pancakes on a medium hot skillet.  Add some blueberries for extra flavor and goodness.  Serve with real maple syrup (never use that stuff made with high fructose corn poison). 

 Asiago Crisps with Marinated Mozzarella

Grate some Asiago cheese.  In a non-stick skillet heated to medium heat, place mounds of the cheese on the skillet and allow to melt, then brown.  Turn and brown the other side, remove to paper towels to drain.  Take some fresh mozzarella buttons and drain the whey they come in.  Add some Italian herbs (I use Van Roehling's Cheesy Italian) some sherry like a good Amontillado, some good Olive Oil and let marinate an hour or overnight.  Place one cheese crisp on serving plate, top with a slice of ripe tomato, then a mozzarella piece, and top with some fresh herbs and another crisp. 

 Chrorizo Stuffed Dates in Puff Paste

I know, it's white flour, but I love these

Take good chrozo and brown in pan.  Drain fat and set aside.  Take a sheet of puff paste and thaw.  Cut into two by 4 inch rectangles.  Take one big Medjool date and slit one side, remove pit.  Take a tablespoon of chorizo and put into date, close date and set on puff paste.  Fold sides of paste around date and pinch to close.  Put on baking sheet.  Repeat with all the dates and put tray into freezer to chill.  Heat oven to 425 and take one egg and beat with a tablespoon of water or sherry, brush the little packages and then put into hot oven.  Bake for about14 to 18 minutes.  Cool a bit and then serve. 

 Lamb Meatballs in Silky Sauce

Take about 4 slices good whole wheat bread and using a food processor, make bread crumbs.  Add a half cup Amontillado or other good sherry.  Take a pound of ground lamb and add the bread crumbs.  Add a teaspoon of peppermint, 1 tablespoon oregano, 1/2 teaspoon crushed fennel seed, 1 teaspoon fresh ground black pepper.  Mix in a half cup finely diced onion and form into small meatballs.  Cook in a 1/2 cup olive oil, turning to brown all sides.  Remove when well browned.  To the oil still in the pan, add 10 cloves garlic thinly sliced.  Add some anchovies if desired.  Add a cup of half and half, a cup of good white wine, and then bring to a boil.  Add a half cup tomato puree and then add the meatballs back to the pan and simmer for about 10 minutes.  Serve these babies as a side dish to the vegetarian lasagna.

 Kalamata Olive Lasagna

Make 3 cups of white sauce using 4 tablespoons butter to 3 tablespoons organic unbleached flour, cook for about two minutes and then add 3 cups milk.  Add a tablespoon oregano, a teaspoon each basil, thyme, and crushed fennel seed.  bring to a boil and remove from heat.  Cook some kalamata olive pasta sheets in boiling water.  Remove, drain and set aside to cool.  Now the fun begins, layer some sauce, cooked pasta, then chopped Kalamata olives with some ricotta, and shredded Mozzarella cheese.  Repeat the layers, pour the remaining sauce over the whole thing and bake in the oven for an hour.  Remove, let cool, serve. 

 Green Beans Almondine

To a half stick of butter add about 12 fresh sage leaves.  Heat the butter to melt and then keep over medium low heat until butter begins to brown, about 10 minutes.  Add a half cup sliced or slivered almonds and turn heat up to medium and stir every half minute or so until almonds brown.  Pour over some whole green beans you have steamed just until lightly tender.

Chocolate Ravioli

Yeah, this is the bomb.  This is it, the ultimate Valentines dessert

Take some Gourmet Texas Pasta frozen ravioli and cook in boiling water for about 6 minutes or so.  Drain and then add to this -   Take about 3 tablespoons butter and melt in pan.  Add a quarter cup of sliced almonds and stir until beginning to brown.  Add some Frangelico or Amaretto and warm.  Add the cooked ravioli and toss well to coat. Plate them, then top with whipped cream, and drizzle some chocolate sauce over the whole thing.  wow.
